Apple Cranberry Shrub
Glass: Highball
Method: Shaken
Garnish: Dehydrated lemon, cranberries on rosemary, nutmeg & cinnamon

Ingredients

  • 1.5 oz Volcán Cristalino tequila
  • 1 oz cranberry/apple shrub
  • ½ oz fresh lemon juice
  • ¼ oz cinnamon syrup
  • ¼ oz simple syrup (2:1)
  • 2 dashes Angostura bitters
  • 2 dashes apple bitters
  • Club soda (to top)

Instructions

  1. Add Volcán Cristalino, cranberry/apple shrub, lemon juice, cinnamon syrup, simple syrup, Angostura bitters, and apple bitters to a shaker with ice.
  2. Shake well until chilled, about 15 seconds.
  3. Strain into a highball glass over fresh ice.
  4. Top with club soda.
  5. Garnish with a dehydrated lemon wheel, cranberries pushed through a rosemary sprig, and a straw.
  6. Shave fresh nutmeg and cinnamon on top.

This seasonal highball is all about balance—the tartness of the shrub plays beautifully against the clean, bright profile of Volcán Cristalino. The cinnamon syrup adds warmth, while the combination of Angostura and apple bitters brings depth and complexity. If you can't find cranberry/apple shrub, you can make your own by combining equal parts apple cider vinegar, cranberry juice, and sugar, then letting it sit for 24 hours. The garnish is spectacular—the aromatics from the fresh-shaved nutmeg and cinnamon elevate the entire experience.
